This is considered to be bad writing in the prequel. Moira would had no memory or knowledge of Charles Xavier and wouldn't recognize his voice.

In a post credits scene for this movie, Dr. MacTaggert is taking care of a patient with no conscious brain activity, although the rest of the body is intact. The DVD commentary explains this brain-dead man is P. Xavier, Charles Xavier's twin brother, who was overpowered by Charles' psychic abilities while they were in their mothers womb and rendered brain-dead. His body and mind was suddenly occupied by the Professor after Jean killed him, and he can be heard saying "Hello Moira" in Charles' voice, with a stunned Moira recognising his voice. Earlier in the film Charles used P. Xavier as part of his lesson, discussing the ethics of a psychic mutant transferring his or her consciousness into another persons body. It is heavily implied he did just that here.
